The refectorer

The refectorer was in charge of the monks’ dining room, known as the refectory. It was his duty to lay the table for the monks’ meals and drinks, but he was helped by several monks appointed on a weekly basis. The refectorer therefore set out the spoons, napkins, bread and ale, and gathered their napkins and leftovers once they had finished.
Did the refectorer not set out knives and forks?
No. Each monk carried his own knife, and it was not the fashion to use forks at this time.
